The other day I was in the mood for pasta salad, but not my normal recipe. I wanted creamy pasta salad. The problem was, I didn't have a recipe for it. I looked up a bunch of different recipes on the internet, but none of them had all the elements I wanted. Finally, I got ideas from a few different recipes, and then I created my own. I love how it turned out - especially the fresh basil and the tomatoes from my garden. Yum!
Creamy Italian Pasta Salad
1/2 cup Greek yogurt
1/2 cup mayo
2Tbsp red wine vinegar (I used white whine vinegar)
1 clove garlic, pressed
2 Tbsp fresh basil - chopped (or 1 tsp dried basil)
1 tsp salt
1/4 tsp pepper
Combine in a medium bowl and stir until mixed. Stir in the following ingredients:
8oz fusili pasta (or similar type), cooked and drained
1 cup cherry tomatoes, sliced
1/2 cup sliced olives
cheddar cheese - cubed - about a cup
Chill in the fridge one hour, or eat right away if you can't wait that long :).
