I have a had quite a few requests for the recipe for Banana Cake, and so I thought I would post it on my blog. This is a family recipe, and a true favorite of the Browns. My favorite part is the Penuche frosting - so amazing, that I have made it by itself before and ate it like it was fudge. So good! I hope you enjoy it as much as we do :).
Sift together the following ingredients:
- 2 c. flour
- 1 t. baking powder
- 3/4 t. salt
- 1 t. baking soda
- 1 1/2 c. sugar
Mix together:
- 1/2 c. shortening
- 1 t. vanilla
- 2 eggs
- 1/2 c. buttermilk (milk with 1/4 t. lemonjuice)
- 1 c. mashed bananas (about 3 bananas)
Beat together dry and wet ingredients about 3 minutes. Pour into greased 9x13 pan. Bake at 350 for 35 minutes. Frost with Penuche frosting.
Penuche Frosting
- 1/4 c. milk or cream
- 1/2 c. butter/marg.
- 1 c. brown sugar
- 2 c. powdered sugar
In a small saucepan, put in milk, brown sugar, and butter. Stirring constantly, bring to a boil, and boil 1 1/2 minutes. Remove from heat and beat in the powdered sugar until it is a spreading consistency. (You may want to add a little extra powdered sugar.) Frost while still warm.
mmmm. I love anything with browned butter. I have a RS thing next week and I'm going to take this!! thanks for sharing the recipe.
